Daiwan Delicious Food

I believe it was in 1972 that we were skiing in Pescegallo, between lake Como and Bergamo in Lombardy, northern Italy. On the slope we met some French people who informed us about an excellent restaurant somewhere south of the place we had been.

It was so gorgeous that I famous what I thought the recipe can be and tried to recreate it after I returned residence, to the pleasure of my skiing companions. It was not quite the identical as the original, and then I found a recipe someplace that I copied in pencil on the inside of the again of a ceral box. It was much nearer to the original, but sadly I don’t know the place the recipe got here from. In the meantime I have made this recipe a variety of instances, each time I found that scrumptious cheese on the market or in a specialty store.

Since this was more than forty years ago I hope no one will be offended if every detail just isn’t completely accurate, including the name of the restaurant. I appeared on the map and found the Restaurant Step Culmine St.Peter on the Culmine Pass and that sounds vaguely acquainted so I will just say it was there. Most importantly, nevertheless, it is on the street to Val Taleggio and that brings us to the rationale for telling this long-winded story here.

We have been proven our desk, served wine, a Capriano del Colle from the Brescia area and some delicious antipasti, but because it was already fairly late the waiter apologetically advised us that there were only two objects on the menu. I don’t keep in mind the other dish, however the chicken filled with Taleggio cheese sounded so good that we all ordered that. The dish was served with risotto alla Milanese (unsurprisingly) and a salad of rocket (arugula) with extra Taleggio cheese shredded over it.

In the meantime Taleggio is out there in lots of supermarkets so I determined to share the recipe right here. I should also note that we took the chance to go to a cheese producer, Casearia Arnoldi Valtaleggio, and stocked up on a number of kilos of this scrumptious stuff.
